Palate Training Course

WSU Palate training course and discussion of wine faults and wine flavour defects.

This workshop will start with palate training to familiarize the participants with the important sensory properties of wines, including evaluation of wine appearance, aroma, taste and mouthfeel.  For all of these sensory properties, practical examples will be provided to illustrate the different attributes that are  discussed.  In the second part of the workshop, we will focus on wine faults and flavor defects.  Participants will be exposed to a series of wines containing different defects and will learn both how the defects are created and how they influence the sensory properties of the wine.  Within this activity, we will present several key aroma compounds and allow participants to recognize their personal detection threshold for these important aroma compounds.  This is a great course for both winemakers and consumers.
